Coconut Carob Bars - Recipe

I originally posted this in my other blog (Cook With Nikki), but really felt that it should be posted in here because, well... They're just that good!

I've made these a bunch of times now, and many people have tried them and enjoyed them! I've also made a few variations of this recipe with a peanut butter filling, but you'll have to check back later for that one... ;)

Coconut Carob Bars


Ingredients: 
  • 6-8 dates
  • 2 tbsp carob powder
  • 1 tsp vanilla extract
  • 1/4 cup quick cooking oats
  • 1/4 cup ground coconut
  • 2 tsp agave nectar
  • 1/4 cup coconut butter + 2 tsp agave nectar
  • Topping: 1/4 cup carob chips
Method
  • Mix all ingredients (except the "topping") together in a food processor until a dough has formed.
  • Press dough into a parchment paper lined cookie sheet. 
  • Melt the carob chips in a microwave for about 35 seconds, and stir. 
  • Drizzle the melted carob chips over the dough, and spread it evenly across the whole surface. 
  • Place it all in the fridge for 1-2 hours, then cut into squares. 
  • Eat, and enjoy! :)
