I've made these a bunch of times now, and many people have tried them and enjoyed them! I've also made a few variations of this recipe with a peanut butter filling, but you'll have to check back later for that one... ;)

Coconut Carob Bars
Ingredients:
- 6-8 dates
- 2 tbsp carob powder
- 1 tsp vanilla extract
- 1/4 cup quick cooking oats
- 1/4 cup ground coconut
- 2 tsp agave nectar
- 1/4 cup coconut butter + 2 tsp agave nectar
- Topping: 1/4 cup carob chips
Method:
- Mix all ingredients (except the "topping") together in a food processor until a dough has formed.
- Press dough into a parchment paper lined cookie sheet.
- Melt the carob chips in a microwave for about 35 seconds, and stir.
- Drizzle the melted carob chips over the dough, and spread it evenly across the whole surface.
- Place it all in the fridge for 1-2 hours, then cut into squares.
- Eat, and enjoy! :)
