Time To Ketch-up on Blogging with a Recipe!

Did I really just use that as my title for a blog post? Did I?!
Yes. Yes I did.

I've been ignoring all blogging 100% while job searching, and settling into a new job - priorities! Now that things are somewhat more normal in my life (who am I kidding, my life will never really be "normal", but that's okay!), I can do a few more posts! :)

I have a bunch of recipes that I really want to post, and things I want to write about - but at this moment, all I can think about is the awesome ketchup I just made! After tasting it, I realised that I can never buy ketchup from a bottle ever again! Something about how this worked out is just too good to not share with the world - so here you go! I think I have to re-name it, as it's not quite ketchup now...
I'll call it... Niketchup. [See what I did there? Nikki... Ketchup... Yeah...]

Niketchup

Ingredients:

  • 1 small can of tomato puree (hush. It's alright to have pureed tomato from a can - but you can puree some tomatoes yourself if you like!)
  • 2-3 tbsp coconut vinegar (yeah, it's odd... it can be found in most health food stores. If you can't find it, you can use a white wine vinegar, but it's not going to taste like what I have in front of me right now! If you like a thicker ketchup, use 2 tbsp. If you like it a bit thinner, use 3.)
  • 1-2 tbsp agave nectar (as with the coconut vinegar, this is purely based on preference. If you like a sweeter ketchup, use 2 tbsp. I find that if using 3 tbsp of the coconut vinegar, adding in the extra a tbsp of agave nectar works really well.)
  • 2 tsp cocoa powder
  • pinch of freshly grated nutmeg
  • 1/2 tsp paprika
  • cayenne pepper, sea salt, black pepper, red pepper flakes - all of these bad boys are "to taste", so start off with small amounts, and then add more of what you feel is needed. I used a few "pinches" of each one, and about 2 tsp of the red pepper flakes.
Method
  • The only method to THIS madness is to mix all of the ingredients in a bowl, and then dip whatever you want into it! I suggest sweet potato fries. [Pictured below: my baked spicy sweet potato fries with some Niketchup.]
