Avocados are such a happy little food. Not only do they provide our bodies with an abundance of nutritional benefits, but they're also perfect in so many different recipes! I used to only think of avocado as the source of guacamole. How wrong I was...
While guacamole is delicious, there are so many awesome ways to eat these creamy little green bulbs of awesomeness. I've made chocolate pudding, lemon pudding, and different types of smoothies with these things. Tonight, when I got home from the gym, I realized that there were two avocados sitting in the kitchen that were getting quite close to passing their prime... So I decided that I wanted something that tasted tart and naughty, with a hint of banana - enter: the raw banana lemon pudding.
So without further delay, I offer you a recipe for some deliciously creamy, dairy-free, healthy, sugar-free-yet-sinfully-sweet pudding. This recipe makes 2 servings, but who are we kidding here - you'll want to eat the whole bowl to yourself! ;)
Raw Banana Lemon Pudding
Ingredients:
- 1 avocado
- 2 very ripe bananas
- Juice of 1 lemon
- 1 generous tbsp of coconut butter
- 1 tsp vanilla bean powder
- 1/4 cup raw cashew milk (you can use any non-dairy milk of your choice really, but I used some of the raw vanilla cinnamon cashew milk that I made...)
- 1 tbsp ground chia seeds
Method:
- Add all ingredients to a food processor, and mix until smooth.
- Pour into a bowl, and let sit in the fridge for 20-30 minutes to set.
- Garnish with some shredded or shaved coconut if you like...
- Eat, and enjoy! :)
