One thing I really enjoyed growing up was oatmeal. Not the healthy stuff though… I was more a fan of the packaged,sugar-filled mush that fills you up on a cold winter day.
Seeing as I can’t eat that stuff anymore, I decided to make a raw version of something similar.
I’ve found that I get highly amused by sprouting foods, so I’ve been sprouting a lot of buckwheat. It’s so cool to come home, and see the changes from the morning, just by soaking and rinsing the little guys in some water and allowing them to sprout.
Anyways, I remember buying a granola with buckwheat sprouts, and found it delicious, so I decided to make some of my own!
The way I prepared this really gave it the texture of oatmeal, so it’s definitely something raw that I can enjoy on a winter morning.
Sprouted Buckwheat Oat(less)meal
Ingredients:
- · ½ cup sprouted buckwheat
- As much as you want of the following:
- · Goji berries
- · Dried cranberries
- · Raw cashews
- · Raw pumpkin seeds
- · Raw sunflower seeds
- · Raw cacao nibs
- · Pinch of vanilla powder
- · Pinch of cinnamon
- · 1 banana*
Method:
- · Add all ingredients into a bowl (except the banana), and fill with enough water to just barely cover everything.
- · Set aside and allow to soak up the water for about 10-15 minutes.
- · Mash up the banana into the bowl, and stir until all mushy and combined.
- · Eat, and enjoy!
*Alternate version:
- · Instead of using a banana, use 2 tbsp ground (or whole) chia seeds.
- · Add all ingredients to the bowl, including the chia seeds, then add enough water to cover the top. Stir, and set aside for 5-10 minutes. If you notice that it’s too thick, add a little more water. Stir again, and set aside for another 10minutes, or for up to a couple of hours in the fridge.
- · Eat, and enjoy!
Notes:
- · Adding raw cacao powder also tastes great with this! You can also add in espresso to make a mocha flavour, but then it won’t be completely raw.
- · You shouldn’t needanything to sweeten it, because the cranberries and banana are very sweet, but if you need to – add in some sweetener to taste.
- · Homemade cashew or almond milk (unstained, keep the nutty pieces!) tastes great with this in place of water!
- · This also works well as a granola with non-dairy yogurts, just skip soaking the ingredients in water and add it into the yogurt instead!
